There are two kinds of iron that exist in both food and supplements - heme & non-heme.

Heme iron is from animal sources, and non-heme iron comes from plant sources or synthetic iron salts.  Animal sourced iron is the most bioavailable form, because our bodies are able to absorb heme in its natural form.

When working to improve iron levels, consuming meat (especially red meat) is a great way to incorporate heme iron into your diet. The heme iron in these cuts of meat is actually held within the hemoglobin molecules still present after cooking. So essentially, you're consuming the meat protein to get access to the hemoglobin (heme iron containing molecule) within.

The challenge is, the iron contained in a serving of meat is relatively low.
